No-Bake Brownie Bites (December 2025)

No-bake brownie bites are the perfect snack for the holidays to make with a little one on your hip and a toddler around your leg! These bites taste just like cosmic brownies but are packed with protein, fiber, and omegas. See the recipe below:


Ingredients

  • 1 cup oatmeal
  • 1 cup ground flaxseed
  • 10 softened dates
  • 1 cup softened cashews
  • 5 heaping tablespoons of cocoa powder
  • 1/2 cup of maple syrup
  • 1/4 cup of milk
  • 1 tablespoon melted coconut oil
  • Splash of vanilla extract

Optional toppings:

  • ½ cup of chocolate chips
  • 1 tablespoon of coconut oil

Instructions:

  • Dump the cashews and dates in the food processor first, followed by the remaining ingredients.
  • Blend until the mixture becomes a dough-like consistency.
  • Scoop out into balls on a parchment-lined baking sheet.
  • Microwave chocolate chips and coconut oil in a microwave-safe bowl for 30-second increments until melted.
  • Drizzle the melted chocolate over the top of the balls. Top with your favorite toppings and store it in the fridge or freezer.
    Life hack: Freeze these and add one to your child’s lunch box so that it’s ready by lunch time!

Healthy Snacks – Ham & Cheese Bagel Bites (November 2025)

Ham & cheese bagel bites will be your new favorite Thanksgiving appetizer! Do you forget to eat when you’re busy cooking the Thanksgiving meal? Not anymore! Try these gluten-free ham and cheese bagel bites that everyone can enjoy.


✨ Bagel Dough

  • 2 cups of 1:1 ratio gluten-free flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1-1/2 cups of low-fat Greek yogurt

✨ Bagel Filling:

  • 1 block of room-temperature cream cheese
  • 1 cup of diced ham
  • 1 cup of diced cheddar cheese cubes

✨ Optional:

  • 1/4 cup of melted butter
  • 2 tbsp of everything but the bagel seasoning

✨ Recipe:

  • In a mixing bowl, combine the gluten-free flour, baking soda and salt.
  • Slowly mix in the 1 1/2 cups of Greek yogurt and set aside.
  • In a separate mixing bowl, combine the bagel filling: cream cheese, diced ham and cheddar cheese cubes.
  • Grab the bagel dough and scoop out small portions, then roll them into balls.
  • Pro tip: Dip your fingers into a ramekin of lukewarm water to use for patting out each ball, preventing sticky fingers.
  • As you indent each ball, add a small spoonful of bagel filling to the center and cover it into a ball.
  • Once each dough ball has filling in the center and is perfectly rounded, brush with melted butter.
  • Sprinkle with everything but the bagel seasoning.
  • Air-fry them at 375 degrees for 10-12 minutes or until golden brown.
  • Set aside to cool for 5-10 minutes - and enjoy!

Healthy Snacks – Caramel Apple Pops (October 2025)

Caramel apple pops are the perfect spooky treat for your Halloween party! With less than 10 ingredients, you can easily make these sweet bites to share with your little ones, teens, friends, or family.


✨ What’s Inside?

  • 2-3 Granny Smith apples
  • 1/2 cup chocolate chips
  • 1/4 cup of heavy whipping cream
  • 1 bag of caramel bits or candies
  • 1 tbsp coconut oil
  • 1 bag of popsicle sticks

✨ Topping:

  • Chopped pretzels and/or dates

✨ Instructions:

  • Cut apples into thick spheres
    Tip: Soak in lemon juice to prevent the apples from browning
  • Heat up a saucepan to medium heat
  • Add caramel bits with a splash of heavy whipping cream to the saucepan
  • Stir the mixture until melted
  • Once the caramel is bubbling, remove from heat
  • Combine 1/2 cup chocolate chips and 1 tbsp of coconut oil into a microwave-safe bowl
  • Microwave in 30-second intervals, stirring in between until melted
  • Transfer apples to a parchment paper lined baking sheet
  • Dip or pour caramel over the top of half the apple slices
  • Dip or pour melted chocolate over the top of the other half of the apple slices
  • Top with pretzels, chopped dates or your favorite crunchy topping
  • Chill until the chocolate and caramel are set—then gather everyone and enjoy!

No-Bake Granola Bars with ETCH Clinical Dietitian Kelly Holbert (October 2025)

No-bake granola bars are so easy for busy parents and children on the go! This recipe can be made DF, NF, GF and V with simple ingredient swaps.


✨ What’s Inside?

  • 10 dates, soak in water to soften prior
  • 1 cup oats
  • 1 cup ground flaxseed
  • 1/3 cup maple syrup or honey
  • 1/2 cup peanut butter or alternative
  • 1 tsp vanilla extract

✨ Topping:

  • 1/2 cup chocolate chips
  • 1 tbsp coconut oil

✨ Instructions:

  • Combine all ingredients in a food processor and blend until it becomes a cookie dough consistency
  • Lay out parchment paper in a brownie pan or glass baking dish
  • Scoop out the dough into the pan and pat it out evenly
  • Combine chocolate chips and coconut oil in a microwave-safe bowl and microwave in 30-second increments
  • Chill in the fridge until the chocolate is set
  • Cut into pieces and enjoy!

Lemon Coconut Bites (April 2025)

Looking for a quick, healthy treat that the whole family will love? Try our delicious Lemon Coconut Bites! These no-bake bites are packed with flavor and nutrition.


✨ What’s Inside?

• 1 cup cashews
• 8 pitted dates (soaked in warm water for about 10 minutes)
• 1 cup unsweetened shredded coconut
• 1 scoop plain protein powder
• 2 tablespoons sunflower seed butter
• 2 tablespoons maple syrup
• 1 teaspoon vanilla extract
• ¼ cup lemon juice
• Zest from 1 lemon
• Plus, an extra handful of shredded coconut for rolling

St. Patrick's Day Caramel Apple Bark (March 2025)

Impress your party guests this St. Patrick's Day with this delicious, easy, gluten-free chocolate caramel apple bark. Made with just six ingredients, this delightful treat is perfect for when you're in a rush.

Ingredients:

  • 1 1/2 cups semisweet chocolate chips
  • 1 tbsp coconut oil
  • 1 cup sun butter or your favorite seed/nut butter
  • 1/3 cup maple syrup
  • 1 Granny Smith apple
  • 1/2 cup pretzels (we used gluten-free)

Materials:

  • Measuring cups
  • Microwave safe bowl
  • Baking sheet/dish
  • Two spoons
  • Parchment paper
  • Plastic baggy, small

Recipe:

  1. Mix chocolate chips and coconut oil in a microwave-safe bowl
  2. Microwave the chocolate chips and coconut oil in 30-second intervals, stirring in between
  3. Line a baking dish with parchment paper
  4. Spread melted chocolate evenly across the bottom of the parchment paper. (Optional: save a little chocolate to drizzle across the top)
  5. Place in the fridge or freezer until solid
  6. While waiting for the chocolate to harden, mix sun butter and maple syrup in a bowl
  7. Once you remove the chocolate from the fridge, pour the sun butter and maple syrup mixture on top and spread evenly
  8. Chop up your apples into small pieces and spread them evenly across the top of the sun butter and maple syrup mixture
  9. Add pretzels to a small plastic baggie and seal. Lightly crush the pretzels with a hard object until the pieces are a desired size
  10. Spread pretzels across the top of the mixture alongside the apples
  11. Lightly press down the apples and pretzels to stick in the sun butter and maple syrup mixture **Optional: drizzle extra chocolate across the top
  12. Place in fridge until ready to serve
  13. Chop with a knife into pieces

Valentine's Day DIY Gummies (February 2025)

Antioxidant and nutrient-rich DIY gummies for Valentine’s Day 💞


Ingredients:

  • 1/2 cup orange juice
  • 3/4 cup pomegranate juice
  • Splash of lemon or lime juice
  • 2 tbsp honey, adjust for desired sweetest level
  • 1/2 oz of unflavored powdered gelatin
  • Optional: add in favorite flavor of whey isolate protein powder for added protein

Instructions:

  1. Pour in orange juice, pomegranate juice, lemon or lime juice, honey into a medium sauce pan
  2. Sprinkle gelatin over the mix
  3. Heat on low to medium heat
  4. Whisk lightly until gelatin is completely dissolved
  5. Pour into molds of choice!
  6. Let sit for 3 hours or until set

Broccoli Bites (January 2025)

Broccoli bites (GF friendly & vegetarian) are a great way to introduce veggies into your child’s diet by disguising the vegetable!

Ingredients:

  • 🥦 1 bag of frozen broccoli, steamed (~2 cups)
  • 1/4 cup Parmesan cheese
  • 1/2 cup crackers or bread crumbs (we used GF crackers)
  • 2 eggs
  • 1/2 tsp salt or to taste
  • 2 tbsp olive oil

Instructions:

  1. Combine broccoli, cheese, crackers, eggs and salt in a food processor or blender
  2. Heat your pan on low-medium heat
  3. Place olive oil in the pan
  4. Using a small ice cream scoop or spoon, scoop out small amounts in the pan
  5. Flatten the scoop with a fork
  6. Cook for 3 minutes or until lightly crispy and then flip
  7. Cook evenly on both sides
  8. Serve with favorite dipping sauce
